I have never cooked a more delicious piece of fish! Melt in your mouth!! Your directions for panroasting were perfect!! And the answers to Kurt's "issues" were a huge help as well, i.e.-making sure fish was dry, etc. My only issue was as I went to open the oven door to grab the cast iron skillet a huge waft of smoke flew out filling the apt with smoke, so now i have the dinger going off the smoke alarm ringing just as my boyfriend walked in to the candlelit dinner. HAHA luckily it tasted so good the smoke filled room was easily forgotten about. thanks again :)

I hope this recipe also works woth tilapia. My husband and I enjoy our tilapia with a little bit of a crust. The only time I accomplished this was completely by accident and I have not been able to replicate it since. I've read the instructions, tips and updates and look forward to trying this technique.
