		<description>I hope this recipe also works woth tilapia. My husband and I enjoy our tilapia with a little bit of a crust.  The only time I accomplished this was completely by accident and I have not been able to replicate it since. I've read the instructions, tips and updates and look forward to trying this technique.</description>

		<description>I tried the updates you sent me and it came out *much* better than last time.  I think my biggest problem the first time was that I didn't get the moisture out of the pieces of fish so it never cooked correctly on top of the stove.  Also, this time we had someone over so I cut the fish into 6 pieces instead of 4 and that seemed to help it out also.  My sauce still needs a bit of work but I think I just need some patience and no kids pulling on my legs to get it right!  :)
