Career Programs

Professional Cooking

culinary academy studentsIn this 900-hour career program, students first learn such basics as knife skills, and menu planning. Then expert instructors teach the students giving them a foundation in professional kitchen equipment, kitchen protocol, food selection, handling and cooking, and food presentation.

The students will also learn about baking and cake decoration, using breads, rolls, cakes and pastries in their work. Instructor will also give the students a full understanding of the processes required for quantity food production in a fully functioning practical environment. Students will also be taught the art of catering in the ability to present delicious and attractive spreads for large gatherings such as conventions and receptions.

Another important aspect to the student’s education will be the methods and rules regarding food sanitation and safety. Later, instructors will teach students the mechanics of restaurant operations, giving them the skills necessary to supervise a professional kitchen. Students will also be given a course on food purchasing regarding food classifications, standards and grading.

Following this, students will enter into an internship that will allow them to practice their knowledge in a real-world environment. Successful completion of this course will provide graduates with the necessary skills to join the food service industry in such entry-level positions as line cook and pantry cook.

Commercial Cooking

This 900-hour course is similar to the professional cooking course but focuses on the aspect of commercial food production in establishments such as schools, universities and conference centers. Building on what has already been noted in the previous course description, there will be an in-depth study of quantity food production in a practical real-world environment.

Students will also get a heavy emphasis on catering; gaining the necessary skills of successfully cooking and packaging gourmet meals that can be transported easily. After completing these steps in an internship that will allow the students the very real skills that they will need to enter such food service aspects as catering. The school provides career services to its students in the form of internships and post-graduate placement.

Professional Pastry and Baking

In this 600-hour course, students will be given a foundation in baking and pastry production, using advanced techniques taught by expert instructors. This course will progress from the basic to the advanced to give the graduates the necessary skills to enter the food service industry in entry-level positions such as assistant pastry chefs, assistant cake decorators and assistant bakers in such food service industry establishments such as caterers, cruise lines and hotels.

In this course students will get an in-depth study of cake preparation and decoration, specialty bread baking, and advanced pastry and dessert techniques. After successful completion of this course, graduates enter into a 200-hour internship to practice their knowledge in a real-world environment.

Continuing Education

Baking and Pastry Arts I

In this part-time weekend environment, student will learn the fundamentals of baking and pastry preparation from expert instructors. In this course the student will learn to create such things as gourmet cookies, specialty breads, cheesecakes, puff pastries, candies and cakes.

Baking and Pastry Arts II

This part-time weekend course builds on the first course and gives students and further in-depth study of such dish creations as petite four sec, chiffon cake, Genoese cake, Bavarian fillings, marzipan, heart-healthy desserts, fritters, tarts and crème Brule.

Accreditation

The Accrediting Commission of Career Schools/Colleges of Technology accredits the Culinary Academy of Long Island for it’s professional courses only.

Facility

The Culinary Academy of Long Island began its operations in 1996 with an expert staff and a vision of creating graduates with only the best skills. The facility is located on 125 Michael Drive in Syosset, New York and is close to all the major transportation arteries. You can reach the campus easily by both public transit and car. The campus is over twelve thousand square feet with four state-of-the-art kitchens. The school also has a complete library and two excellent dining areas. Students will feel very comfortable in the spacious lecture halls.
