About the Arizona Culinary Institute
Co-Founded by Chef Robert E. Wilson back in 2001, the Arizona Culinary Institute program is designed to be both sensible and time efficient. They teach in small group environments where you will learn more faster. The curriculum is carefully planned and balanced to achieve a solid foundation needed to build and avance your career.
Facilities
The school is located in an 18,000 square food facility featuring 5 different kitchens, four classrooms and a student run restaurant called du Jour. The building was designed and built to be a culinary training facility from the get go. It is spacious, well lit, comfortable and houses state of the art equiptment.
Diploma in Culinary Arts, Baking and Restaurant Management
The Arizona Culinary Institute program is broken down into Blocks from 1 to 4 and then an Internship.
- Block One - Weeks 1 thru 6 - Culinary Arts I & II
- Block Two - Weeks 7 thru 12 - Saucier and Meat Fabrication and Basic Baking
- Block Three - Weeks 13 thru 18 - Management, Wines & Spirits, Nutrition, Advance Baking, Pastry & Showpieces
- Block Four - Weeks 19 thru 24 - Restaurant Operations and Advance Cuisine
- Internship - Weeks 25 thru 36 - Internship - a paid position as an Intern ath a restaurant, resor, catering or culinary location.
du Jour Restaurant
A fine dining restaurant and lab for students attending the school, du Jour Restaaruant is open to the public Monday thru Friday. As a student you will take part in running the restaurnat as part of your culinary and restaurant management education. The school encourages you to dine at the restaurant to sample fellow classmates work and provide you with a 50% discount on all food items.
Job Placement
The school offers all students Employment Assistance while they are at school, upon graduation and even throughut their career and is one of the schools primary missions. Their faculty and staff have thousands of potential emploryer contacts nationwide.
