I made cookies yesterday, for the first time in a few months. I seem to go in phases - no baking for weeks at a time, then I bake and bake and bake, until I can't even give it away. My standby is chocolate chip cookies (which I made yesterday), but I also love "no bake" cookies with oatmeal - there are 2 varieties I love and I wanted to share the recipes here in the hopes that someone will be inspired. I am also looking for a new cookie recipe to try, so please share yours. Here are my 2 unbaked cookie recipes:
Chocolate Kind:
3 c oatmeal ½ c coconut
6 tbsp cocoa ½ c nuts (optional)
Mix together in large bowl. Set aside.
1 tsp vanilla 2 c sugar
½ c butter ½ c milk
Melt together over low heat. Bring to boil slowly, boil for 1 minute. Remove from heat immediately, pour into dry mix and blend. Drop by spoonfuls onto wax paper.
Peanut Butter Kind:
2 c sugar ½ c butter
½ c milk
Melt together over low heat in very large saucepan. Bring to boil slowly, boil for 1 minute. Remove from heat and add:
½ c peanut butter (I use crunchy)
1 tsp vanilla
Mix together until creamy. Then add 3 c oatmeal. Drop by spoonfuls onto wax paper.

Here's a no bake granola-type bar I recently tried. I used maple syrup for part of the honey. They came out great, chewy & crispy.
1 T butter
1/4 C brown sugar
1/4 C honey
melt in sauce pan & boil 1 minute.
Stir in
1 C oats
1 1/2 C rice crispies
1 C assorted dried fruit, nuts, coconut, chocolate chips
Press firmly in lightly non-stick sprayed 8 X8 |
