My DH and I are NOT vegetarians, but are trying to eat healthier. We have cut beef back to only 1x per week and added fish up to 2x per week.
My next goal is to have one meat free meal per week. My DH is a meat freak and this might be very hard for him! LOL
I'm looking for not just meat free, but also healthy dinners (not just fatty mac and cheese type stuff)
If I can incorperate veges I have in the garden, even better! (broccoli, chard, brussel sprouts, leeks, beets, lettuce, carrots, spinach) I also have chickens and have a ton of eggs. We've been having omlettes and quiches.
Any Ideas? TIA |

| I posted a recipe for an asparagus and herb fritatta on the fave recipes thread .... it's pretty good and I do believe it would be very tweakable to your personal taste. |

don't know how you feel about eggplant - but it's a great dish.
many people are hair raised violently opinionated about it - mostly because they prolly never had "the good stuff"
my cousin and her husband visited, did up a proper dry aged prime rib (they have problems getting good beef...) and without even thinking I did sliced, breaded eggplant. her husband finally asked 'what is this? seems like eggplant but I hate eggplant....' oops. he was into seconds and wanted lessons on doing that.....
it _does_ take some care and learning to cook it right - not hard, just demands absolute attention to cooking time.
another non-meat fave is the pre-done polenta in rolls. sliced, sauted, baked, cheesed, gravied, sauced, diced in a cobb salad knock off.... |

| I did finally learn to make decent eggplant Parm a-la-Cooks Illustrated. That is one of my no-meat faves. I guess I could use more eggplant in other stuff though. Thanks for the reminder. NT |

| I have an tasty and easy to make Eggplant Parmesan cheese recipe from my friend Chef Ricco DeLuca that I will post on my web site that you will love. His secret is to use shredded Munster cheese. The results are amazing. |
