Right after we got married 50 years ago, my mother gave me a little cookbook that was put out by the Federal Government in the late ’30 or early ’40. I got this recipe from that little paper book. Been cooking if ever since. It’s easy and good. For a varation you might want to add a little grated Cheddar cheese, not on the top, but make three or four layers and sprinkle a little on the lower level. Come to think of it a little finely chopped onion might not be bad either.
SCALLOPED POTATOES
3 Medium Potatoes
1 Tablespoon All Purpose Flour
2 Tablespoons Butter
3/4 Cup Milk
Salt and Pepper to Taste
Peel potatoes and slice into thin rounds. Place half of the potatoes in a greased glass baking bowl. Sprinkle with half the flour and dot with half the butter. Sprinkle with Salt and Fresh Ground Black Pepper. Repeat with the other half of the ingredients and again sprinkle with Salt and Fresh Ground Black Pepper. Pour the Milk over the top. Cover and bake at 350° oven for 30 minutes. Remove the cover and continue to cook for another 20 to 25 minutes. During this time you need to check the potatoes from time to time and add a little more Milk if needed. |

I'm glad you posted this! My DH came along with me to the grocery store (I let him come from time to time) and he grabbed a box of this stuff! It was a bunch of potato chips with some powder. Add so and so.
Now I can make it from scratch!

| I've never seen a scalloped tater recipe that didn't call for making the white sauce on its own. This sounds right down my alley ... EASY :D Will have to try this ... DH loves scalloped taters, but my "old way" is kind of a pain. This sounds way cool! |

easy scalloped potatoes----
you should have a large non stick fry pan that has a cover.
Put a few dabs of butter in the pan. Slice a couple of potatoes and put them in the pan. Sprinkle one or two tbs of flour over the potatoes.
Place small dabs of butter around the potatoes. Pour milk into the pan - enough to cover the bottem of the pan and up the sides just a little.
Place a cover on the pan and cook over medium heat for approx. 25 minutes. At the half way mark, stir the potatoes gently.
If you wish, you could add grated cheese.
It's easy and it works. |

I tried the stovetop method last night and it was GREAT!!!!!! It was actually done in about 20 min, but I was only cooking for the 2 of us, so there weren't a bunch of layers.
This seems like a nice easy camping dish. I'll try it when I go in a couple of weeks. Maybe add some fresh herbs! Suggestions? |

| Diggin' that stovetop method! Scalloped potatoes are pretty much a blank slate inasmuch as you can add almost anything to them--crumbled bacon, anyone? :D |
