I'm not getting enough tomatoes to get another sauce going, but too many to eat, so I pulled out the dehydrator.
I do tomatoes, squash, peppers, apples and freeze for use in soups during the winter (not the apples, those are for snacks)
I'll have to hit up the farmers market to see if I can find some stuff that I don't grow to dry/freeze for the winter. NT |

Nancy, you are an inspiration for us Veggie Neophytes!
Have you ever tried smoked tomatoes? I saw them on a Food Network show a few years ago. I think they're by Boggy Creek Farms--they're out of Austin, TX. I bet it'd be pretty easy to do at home, and they are really, really good--adding a meaty, smoky dimension even to all veggie dishes. |

That sounds like something to try! Do you have to use a smoker? Maybe a BBQ with smokey chips? Hmmm, maybe in the dehydrator with something smokey added?
I love anything tomatoes and love trying anything I can! Besides everything fresh (soon to be gone :cry: ) I dehydrate, make sauce with and without meat and stewed tomatoes. I haven't canned in years, but freeze flat in a food saver bag then vac. This way I can stack the slabs in the freezer . Same with soup (would you like a slab-O-soup? is my offer! LOL) |

Seems like you could make a smoker at home. Saw Alton Brown do it one time to smoke some salmon. If you search "Alton Brown Homemade Smoker" on youtube, there are a bunch of helpful videos for making a DIY smoker.
PS I would love a slab of soup! :) |

I was hoping to be able to do something in the dehydrator I have. I read through the site. Looks like I would have to build a whole contraption. I'm not THAT motivated! LOL
I might try some stuff on the grill with some chips, then finish drying in the DH. It might work!
If it does, I've got my Xmas gifts covered for this year!
People love my strange food and plant gifts! They never think they will use them..........and yet, Aha! |
