I've been enthusiastically poaching all kinds of fish lately. interesting way to get flavors with the fish....
this is two medium garden vine ripened tomatoes, two mediumish banana peppers, salt, pepper
simmer down the tomato & pepper (covered) until soft, check to ensure sufficient poaching liquid - add water / wine as needed.
poach the salmon - takes 10-15 minutes depending on thickness

served up with dinner rolls, fresh steam asparagus and a freshly dug garden baked potato! |
