For us today, three cheese taters with grilled ribeye. But I have to tell you what I had for dinner during the Steelers / Bronco game last Monday (yay Steelers!!) Christy's brother live in NM and was back for a visit, and brought us bushels of frozen fresh roasted green chilis (Big Jim I think??) Anyhew, in a grilling basket he layered bacon strips, chilis, lovely shrimp, more chilis, and finished with bacon then grilled to perfection. I don't even remember what else there was. I love my cilantro shrimp with lime butter baste, but this was amazing!! One can have two favorites, right?? And since I have the basket, and the bacon, and the chilis, and the shrimp ... guess what I'm thinkin'??

The more favorites, the better, I say! That sounds amazing. BTW, were the chiles from Hatch? I know that they're a big chile producer in NM and there's a big festival there every year. Just wondering.

It sounds like they just went to a farm or roadside stand of some sort. I guess the farmers all roast the chiles at about the same time and it smells just wonderful when they are doing so. I'm thinking road trip next year just for the smell of it :wink:

I'm making a ham for us today probably with leftover three cheese taters and veggie tbd.

Sounds wonderful--the smell of roasting (almost) anything makes my mouth water!
