Hi--I've been baking cheesecakes for years. My springform pans have begun leaking during baking. Can I line them with parchment to solve this problem?

Also, another cure for cracking cheesecakes, after all obvious problems are solved, (temp. changes, opening oven, etc)--after pouring in batter, pick up the pans & drop on counter a few times until bubbles stop rising to the top.
(Hey, could this be why my pans are leaking?!?)

hmm,,,

couple questions... are the pans leaking "out" or leaking "in"?

I presume you are using at least a bottom crust, perhaps not a side crust - which would leave the vertical "seam" exposed.

normally the crust should seal the side-to-bottom joint - at least from leaking "out" - if using a water bath, that 'seal' won't prevent water from leaking in.

use parchment to line? absolutely.

Thanks, Dilbert for the info on the parchment paper.

These springform pans leak OUT. The crust is on the bottom & goes about 2/3 up the sides. I've tried filling the empty, assembled pans with water to locate a leak & can't detect one. I guess the heat of the oven expands them, causing leaks?!? They are good quality German pans & never leaked before. I'll try the parchment until I can buy new ones. Any brand recommended?
