I saw something yesterday that kind of got my attention. It was something about tortellini chicken soup and thought it might me fun to make up a recipe for it. Here is what I came up with:
CHICKEN TORELLINA SOUP

4 Cups Chicken Broth
3/4 Cup Chicken Breast, cooked and cut into small pieces
1/3 Cup Onion, finely chopped
1 Clove Garlic finely chopped
4 Tablespoons Carrots, finely chopped or grated
2 Tablespoons Celery Finely chopped
Salt and fresh ground Black Pepper to taste
8 Ounce Cheese Tortellinis
2 Tablespoons fresh Parsley, chopped

In a large sauce pan or Dutch oven, bring Chicken Broth to a simmer. Add Chicken pieces, Onion, Garlic, Carrots, and Celery. Add Salt and Pepper to taste and simmer for 25 to 30 minutes. Add Cheese Tortellinis and simmer for another 20 minutes or until the Tortellinis are done, adding the Parsley about half way through cooking of the Tortellinis.

Yum! I love any kind of chicken soup. I will make this as soon as I get to the "city" for tortellini. Not up to making it myself. I'd have to order semolina.

I would probably add some fresh basil because I have some finally. If I happened to have an open bottle of dry white, I might give it a splash. It doesn't need it though.
