zucchini everywhere?

This is a soup I made last summer to use up all the zucchini my mom brought. We liked it so much I've actually bought zucchini or whatever summer squash I could find to make it every week or two since.

I do use 1 sliced link of sweet Italian sausage & half a chicken breast, but it would be good with just veggies. Maybe add a small shell pasta. Someday I'd like to try it with fennel root.

3 stalks celery & some leaves
3 carrots
1 med onion
1/2 C mushrooms
1 green or red pepper (or yellow or combo)
4 cloves garlic
1 can tomatoes
1 can garbanzo beans
3 or 4 small summer squash
1/2 - 1 C red wine
2 or 3 C chicken or vegetable stock
salt, pepper, red pepper flakes & whatever Italian herbs you like.

Ooh I just figured out Italian kept showing up red underlined because I wasn't capitalizing it.

sounds simplishly good!

I presume one dices/slices/chops the veggies . . .

I'm fond of leeks - good sub for some/all of the onion.

Oh yeah chop the veggies! I love leeks too. Good idea. Maybe back off on the peppers so their sweetness can shine. Especially if I do the fennel root.

Other things I do with zuk-

saute with corn, onions & peppers
add to stir fry or coconut curry
pizza
slice them lengthwise & use instead of lasagne noodles
substitute for eggplant in parm
raw in mac salads

They always seem to get overwhelming & you end up with big ones. I peel them & scoop out the spongy part then grate & freeze. Its good for bread of course but also to add to turkey meat loaf to help keep it moist.

You know how applesauce is used to reduce fat in baking? I bet zuk would do the same thing.

Ok I've probably said enough about zucchini. Ninjabut I hope you'll start a new thread & tell me about what you're picking. I don't have enough full sun where I live now to grow veggies so I'd like to live vicariously. :)

Oh change "3 stalks of celery" to "3 ribs of celery" as LADAWG has enlightened me to the distinction.

THE ZUKs are HERE!!!!!!!!!!!!!!!!
Picked 4 today! 2 crook necked to go with them!
Everything is soooo slow this year! NO spring!

My folks are coming from IA this weekend, but they've had so much rain a lot of the vine crops have rotted. Might not get too many zuks:(
