We stopped by a Dollar General store for my wife to buy a couple of greeting cards. It seems it takes her forever to pick out just the right card, so I elected to stay in the car rather than join her in the store. It just so happened I had the latest Penzey’s Spice catalog to look through and read while she was inside.

Someone had sent in a recipe and said that one of the side dishes they served with the recipe dish was Baked Bananas. I had never heard of such and just had to find recipes on the internet. I’ve printed off three or four and intend to give Baked Bananas a try.

How many of you have ever tried Baked Bananas? What results did you have and do you have a recipe that you use?

Never actually baked them, but have done the bananas foster type thing in the skillet with butter, brown sugar & cream. Perhaps similar taste & texture?

I have had baked plantains, more of a starch than a sweet of course but very tasty.

We eat a LOT of bananas. I have a hard time buying enough to let them get ripe for banana bread. Sometimes my local store has extra ripe ones & I buy them & freeze.

I got interested in bananas and surfed the web, not only for different recipes, but general information. One of the things I found was a list of countries that grow bananas and how many metric tons they produce. Who do you think was first? It was India with 21.77 metric tons. China was second growing 8,04 metric tons. The Philippines were third. Brazil came in fourth, growing 7.10 metric tons or only a third of what is grown in India.
I found this interesting. Of course there were other Central and South America (Ecuador, Costa Rica, Guatemala, and Honduras were all on the list) countries listed as well as Mexico.

I have never cooked them myself, but I had baked bananas once a few years ago at a dinner party. They were delicious! If you find a good receipe, let me know. Definitely worth perservering and finding a good one.
