My DH is leaving on an Alaskan cruise Sat (his dad's turning 90 and wanted a last blast with the 4 sons)
I would probably be OK making a couple of dishes and eating off those for several days, but the glitch is that I'm taking a relative's sister, who is mentally ill to cancer treatments, and I just got the schedule and she has to be there at 5:50 each day! What a pain!
I'll be gone most of the weekend, so I can't really pre-cook a bunch of stuff. I do have some stuff in the freezer, that I hope is OK
I will have a couple of hrs between getting off work (naps and errands) to maybe prep stuff.
What is your favorite (single)meals or ways to prep things for a quickie dinner? (this is NOT a what's for dinner topic, but a prep topic)
As I said, I have no time this week or the weekend to pre-cook.
Any ideas??? Oh BTW, I TRY to eat healthy! Nancy |

Wow what a wonderful trip for the guys!
I would prep all the veggies (carrots celery onion gr pepper cukes zuks broccoli whatever you like and\or have in the garden. Not much I know :(
Then probably go big salad with a toasted French bread sammy. Maybe get a rotisserie chicken (might have MSG tho, you could sautee or grill chicken breasts instead & grill some veggies while you're at it) & have with bread & salad & use the leftovers in fajita, stir fry & pasta dish with the veggies. I also love "hot & naked" (I didn't make up the name) which is just pasta topped with olive oil, grated parm & salt & pepper.
At least one night I would probably make breakfast since except Sunday I usually only eat yogurt, fruit & toast in the morning. Big fan of the spinach omelette. Pancakes or French toast with peanut butter. Hot cereal with peanut butter toast. Um other stuff with peanut butter!
One of DH's favorite hurry up dinners his mom used to make (& so do I) is fried potatoes with beaten eggs poured on top & cooked with the lid on until the eggs set. Kind of a frittata. Have with fruit. Not TOO unhealthy if you go easy on the oil. |

All of those sound just perfect!I have a whole chicken I can roast. No, I'll BUY ONE dang it!
I'm so used to doing the full meals with a different kind of meat each day (hey, the guy grew up in Scotland in the 60s, he likes MEAT)
I'm a chicken and fish person.
Oooh, I might get a little used to this single eating!LOL. He might just have to put up with what I want when he gets back! LOL
I think a BLT may be in order, with some cheese and avacado! WooHoo! I'm going wild! LOLOLOL NT |

Well, none of it has worked until tonight!
Her appts went over by 1- 11/2 hrs the last couple of days!
So far this week, I've had the leftover beef/vege meal over rice, (late appt) a micro burrito, cooked some garlic chicken, but didn't gt home til 8, so a chicken sammie, finally, tonight, a salad and chicken alfredo! Not the healthiest, but it's a MEAL.
Oh MY! I'm going to have a hard time being single down the road! I hope it's not too soon!
We'll have to start a thread about single healthy eating.
Just so it doesn't include what you eat tonight!
