I received an email from Carole asking,

“Would you recommend making a brie/cranberry appetizer tart ahead of
time. Can Brie freeze and thaw okay? Thanks for any help you can provide. ” Carole

So I asked my friend Chef Jennifer, who is also a member of this cooking community and a great baker, what she thought. Here is what she told me.

“To answer Carole's question without knowing her exact recipe (is she wrapping the whole thing in puff pastry?) I say "no" to freezing Brie, but yes to making it ahead. It should be fine if the cranberries aren't too wet and won't give off too much juice while hanging out in the fridge. She could easily get away with putting it together on two days before. If she were wrapping it in puff (or some other dough), I'd do it the day before.
