We never had Beef Tips over Rice at home when I was growing up in North Mississippi. After I was married and I was working and eating my noon meal out this was an option at almost every café (noticed I did not say resturant) in every small town in the deep south. Just like chicken fried steak is offered at most any café in Texas. I’m cooking that for our lupper today. It’s in the crock pot and should be ready about 2:30 or.

BEEF TIPS

1 Pounds of Lean Beef Stew Meat cut into 1 inch cubes
3/4 Cup All Purpose Flour
1/2 Teaspoon Salt
1/2 Teaspoon Fresh Ground Black Pepper
1/4 Teaspoon MSG
1/4 Teaspoon Garlic Powder
3 or 4 Tablespoon finely chopped Onion
1 1/2 Cup Water
2 Tablespoon Olive Oil or Cooking Oil

Mix together the All Purpose Flour, Salt, Fresh Ground Black Pepper, MSG and Garlic Power in a small bowl or better yet a pie pan. Heat the Olive Oil or Cooking Oil in a large skillet or Dutch oven. Dredge the Beef Cubes in the Flour mixture and brown over medium heat turning several times. Remove browned Beef to a paper towel to drain.
Put 3 or 4 Tablespoons of the Flour mixture in the skillet with the pan drippings. There should be enough oil to make a roux, but if not add a little more oil. Stir for a few minutes until it is brown. Add the Water, and chopped Onions making a gravy.
Put the browned Beef cubes in a crock pot, add the gravy and cook on low for 6 hours or until the beef it tender. Check on cooking several time stirring each time.
When the beef is tender, and the gravy thick serve over cooked rice or noodles. A pound of beef is enough for 4 or 5 serving.

Today I added a little Mural of Flavor, a spice blend I get from Penzey’s, and a good sprinkle of Sweet Basil to the flour mixture.

Leftover night for us. I'll make a salad and we have quiche and/or pesto pasta with chicken.
We've decided to have leftover night once a week cause we're so bad about taking them for lunch and they find their way to the back of the fridge only to end up in "the green bag" (for those things in the back of the fridge that are green or worse!) They get put in a bag and into the freezer until I can get to a dumpster or dump day (which is only every 3-4 months)
