Back before Al Gore (or at least that’s what he claims) invented the internet there was a computer service named Prodigy. It was a joint venture between IBM and Sears. There was a section on cooking and the following recipe came from there. Since there are just me and my wife to eat this I just cook half a recipe. That’s enough for at least 6 servings
HORSESHOE MOUNTAIN PINTO BEANS
1 Pound Dry Pinto Beans
1/4 Teaspoon Ground Cumin
1 to 2 Quarts Water
1/4 Teaspoon Mexican Oregano
3 to 4 Slices Bacon
1 Clove Minced Garlic
1 Tablespoon Chili Powder
1 Medium Chopped Onion
1 Tablespoon Sugar
1 Teaspoon Salt
1 Teaspoon Black Pepper
Wash, sort, and place Beans in a large pot or kettle. Add Water and remaining ingredients (except Salt, which should be added 30 minutes before the beans are done). Cover and simmer for 5 to 6 hours. Check liquid level occasionally, adding more water as needed. If you want to jazz the beans up a bit add more Garlic and Chili Powder. This recipe also works especially well in a crock-pot. If you use a crock-pot then use only one quart of water and cook on the low setting for 8 to 9 hours.
Notes: 1. If more Water is needed make sure it is boiling, and not cold Water. |

that always makes me giggle - the roots of 'the internet' go back to the Cold War - it has evolved quite a bit - but the original concept of a network of networks still underpins the 'internet' today.
Compuserve (1979) predated Prodigy (1984) and AOL - I joined Compuserve in the mid-80's - last time I called about a dead dial up modem they told me my user ID (all numbers, remember...) didn't have enough digits - so much for well trained customer service.
Compuserve still exists - there's still a cooking group there - used to have hundreds of messages/people per day participating but it's down to perhaps 5-6 members most of whom are staff. |
