I posted the zucchini muffin recipe a little while ago, but the garden is winding down and it was actually quite expensive to make these muffins (as yummy as they were!)
I would love a recipe for a very healthy muffin (or other breakfast type portable meal) that I can make in advance, freeze and pop into my lunchbox to eat an hour or so after I leave home.
I'm horrible about eating breakfast on weekdays, but have found that I eat less at lunchtime if I eat one of those muffins at about 10AM.
I'm talking about eating in my car (I know, I know) or within about a 10 min period while waiting for a bus!
I do get to sit down for lunch and have access to a microwave then, but mornings, NO NT |

| I have a wonderful zucchini bread recipe on my blog that you may find works for you or can be converted to muffins. I'm sure everyone says theirs is the best but this one is really good. |

I entered this into a nutrition analyzer and, though it sounds great it came up with a D- nutritional grade! :(
Not knowing, I entered it as 8 servings.
Cal 570 Fat 38.2g Sat fat 6.4g Chol 70mg sodium 634mg carbs 55.4g fiber 2.5g sugar 2.5g
I think I'll stick to my other recipe. NT |

| Wow, I didn't know you were looking for a healthy zucchini recipe. I thought you were looking for something delicious. This is an old recipe from my wife's mom and she has been making it for years. It makes a big loaf so I'm guessing you could run it through your analyzer for 12 to 14 slices and see how it does. |

It's still up there, probably due to the cup of vege oil
14 servings= 304 cal, 22g fat, 3.7g sat fat, 40mg cholesterol, sodium 196, carbs22.9 |
