Another favorite of mine.

4 Chicken breasts, scored.
1 cup of honey, subtract or add for varying sweetness
2 sprigs of: rosemary, lavender, thyme and 3 sage leaves
2 tbs of olive oil
1 garlic clove, saute in 1 tbs of olive oil

Mix together the olive oil, honey and herbs. Spread over and in the chicken breasts. Wrap in foil then plastic and let marinate.

Place the marinated chicken in the oven at 350 degrees and let cook for 20 minutes, or until brown and white in the center.

Serve over a bed of baby greens if desired. Enjoy!

This looks good - do you chop the herbs and saute them with the garlic before adding them to the honey? and also, how long do you marinate the chicken for?

I would think you could chop and saute the herbs and garlic for a deeper flavor, but for ease of prep, you can just throw everything together. I'd say you could let the chicken marinate for up to 4 hours, maybe with a minimum of 30 minutes.

Personally, I'd add some salt and pepper and maybe a nice squirt of Dijon mustard to this to balance out the sweetness of the honey. I bet a tablespoon or so of fish sauce would be great, too.
