Anyone use a covection oven?

I got a new range a couple of years ago and it has the convection option, but I have rarely used it.
What do you use it for mostly?

I use ours for rarely. [g]

the theory is that the forced air circulation distributes heat more evenly and slightly faster so you need lower temps and short time.

the only place I've seen it make a noticeable difference is cookie baking - that does go quicker.

I've used a commercial convection oven before. Things baked more quickly with nicer browning, but we still had to rotate the pans halfway through the baking time. Any recipe written for conventional ovens, I reduce the heat in the convection oven by 25F.

The oven automatically changes the temp and time if you hit the convection button. I'm kinda guessing baking, roasting and casserole type meals might be what I'd use it for?
Way too high tech for me! LOL I'm better off cooking in a cast iron pot or pan!
