SUSAN'S FAMOUS SAUSAGE BALLS

1 Pound Hot Whole Hog Sausage
10 Ounces Kraft Reserve Aged Cracker Barrel Cheese
3 Cups Bisquick or Pioneer Biscuit Mix

Grate Cheese in a large mixing bowl and allow to stand at room temperature for about an hour. Sauté‚ the sausage much like you would ground beef. (Any good brand of sausage will do. i.e.. Williams, Tennessee Pride, Jimmy Dean, Owens, Bryan's etc..) It will be necessary to break up the sausage using a fork or spoon. After the sausage meat has changed color drain the grease and add the sausage to the mixing bowl. with the cheese. Add the biscuit mix and use your hand to blend the ingredients together. After it's well mixed and blended roll into 3/4 to 1 inch balls. Place on a baking sheet, and cook in an 350° oven for 20 to 25 minutes or until a golden brown. Remove to paper towels and allow to cool. Store in an airtight container in the refrigerator.
