About the The Culinary Institute of America

With a history that spans over 60 years, the Culinary Institute of America has been a leader in culinary education and training for decades. In 1946, it opened its doors under the name New Haven Restaurant Institute of Connecticut. It was meant to provide vocational training to WWII veterans and started with a total of 50 students.

Just one year later, it was moved to a building next to Yale University and given a new name. The title Culinary Institute of America wasn’t bestowed until 1951. The current location – a former Jesuit seminary in Hyde Park – was purchased in 1970, and now teaches thousands of students each year.

The school is “dedicated to providing the world’s best professional culinary education.” It goes beyond culinary training to include professionalism, ethics, and leadership. It is recognized for the overall quality of students it produces; in fact, over 300 restaurants and companies actively recruit graduates for employment.

There are four degree programs offered through the CIA: a Bachelor Degree in Culinary Arts Management, a Bachelor Degree in Baking and Pastry Arts Management, an Associate Degree in Culinary Arts, and an Associate Degree in Baking and Pastry Arts.

About the Culinary Arts Management Bachelor of Professional Studies Program

The Culinary Arts Management Bachelor of Professional Studies program lasts a total of 38 months. It offers liberal arts education as well as culinary-intensive training. It is meant to prepare students for future positions as executive chefs and industry leaders.

It moves from basic cooking education to advanced techniques in international cuisine and classical and contemporary culinary skills, with a special focus on kitchen management and restaurant supervision. It includes a paid 18-week externship in one of the area’s numerous establishments.

About the Baking and Pastry Arts Management Bachelor of Professional Program

The Baking and Pastry Arts Management Bachelor of Professional Studies program is similar in length to the Culinary Arts Management course. It extends beyond basic baking and dessert making to include leadership skills training and courses on the business side of running a successful bakery.

About the Culinary Arts Associate in Occupational Studies Program

The Culinary Arts Associate in Occupational Studies program lasts for 21 months. It focuses on the fundamentals of culinary training in a time-shortened approach meant to get results in fewer than two years. This degree is also adaptable for already-existing culinary professionals.

The Advance Career Experience program offers a 15-month version of training by using valuable work and life experiences as part of the educational process.

About the Baking and Pastry Arts Associate in Occupational Studies Program

The Baking and Pastry Arts Associate in Occupational Studies program also lasts for 21 months. It offers the same culinary skills training found in the Bachelor program, but with less attention and time spent on management and leadership training. Both programs include experience in the CIA’s working bakery-cafe.
