New York City Culinary SchoolThe food service industry is a beacon of growth and provides those who take advantage of this wonderful opportunity with the tremendous possibility of job security and satisfaction.  With nearly two million positions expected to open over the next decade, a career in food service is one of great possibility for those who love food and like to travel while practicing their craft.  The Italian Culinary Academy is a fantastic school that gives its students the skills necessary to take advantage of this explosive industry trend.

The Italian Academy offers both amateur and professional programs and applicants wishing to study at the academy must have a high school diploma or GED equivalent, complete with a medical certification indicating that they are free from Hepatitis B and Tuberculosis.  A five hundred dollar deposit, which includes a $100 non-refundable application fee, is required for application.  Those wishing to take part in the professional programs must also supply a complete resume of previous experience.

 

Italian Culinary Experience

This professional program is designed to give those with previous experience an in-depth knowledge of Italian Cuisine in a practical environment.  The Italian Culinary Experience is an approximate 1057 hours in length.  Students will spend 313 hours in the academy in New York, 384 hours at the academy in Corlano, Italy and then another 360 hours of externship at a top Italian restaurant with a final week of exams back in New York City.

In New York, the student will start with a weeklong immersion in Italian language and culture.  After this, they will gain a foundation in kitchen techniques and sanitation as it pertains to Italian cuisine and the handling of vinegars and oils.  They will also learn about such things as Italian cheeses and antipasto.  Expert instructors will teach the students about stocks and sauces, making and preparation of pastas, pizza and flatbreads, fish dishes, meat dishes, side dishes and Italian desserts.

If successful, the student will then travel to Italy to study under a Michelin Guide rated chef to learn further about products and raw materials available for Italian cuisine, Italian cooking practices and recipes, wines appropriate for the table and Italian pastry.  The student will also visit the production sites of the integral ingredients to Italian cuisine such as olive oil, balsamic vinegar, Parma ham and pasta.  After this intensive nine-week study, the student will be placed in a picked Italian restaurant to practice what they learned in a real-life environment.  After returning to New York and successfully completing the exams, graduates can enter the food service industry in high-level positions such as head chef.  The cost of this course is approximately $31,000 US.

Essentials of Italian Cooking

In this three-week course, the student will gain a foundation in hand and knife techniques.  They will also learn about such dishes and ingredients as pastas, pizza, cheese, seafood, stocks, sauces, soups and desserts as they pertain to Italian cuisine.  The cost of this course is $2660 US.

In these 35 hour/ 7 session courses, the students can choose from a collection of specialties that will enhance their Italian cooking experience.  Instructors will give total immersion training in such areas as pasta, pizza and polenta, Italian cheese, wine and vegetables, Italian meat and poultry, Italian fish and shellfish, and Italian pastries and gelato. 

It is recommended that all students wishing to take part in these courses complete the 3-session course, Knife Skills, Deboning and Filleting where they will learn basic knife techniques and professional kitchen protocol.  The cost for each of these courses varies, and the applicant should contact the admissions office for further financial details.

Mini Italian Courses

The Italian Culinary Academy also provides a plethora of part-time amateur night classes ranging from pizza and gnocchi, fish and shellfish, to pastries and desserts.  These two to three session courses are designed to give the amateur a taste and talent for preparing fine Italian cuisine so they can improve their own home cooking styles.  These courses range from $650 to $795 per course.

 

Facility

The Italian Culinary Academy is headed by the famous chef and restaurateur, Cesare Casella, and is located at the historical Soho location of 421 Broadway in New York, New York.  The academy employs only the top instructors and operates out of a spacious building with cutting-edge equipment and cooking philosophy.  The campus is easily reached by both public transit and by car.  Parking is not provided. 

 

Financial Aid

The Italian Culinary Academy participates in many state, federal and private financial aid programs.  It is recommended that the applicant contact the admissions office for complete details of what funding is available for those that qualify.  The academy also provides a scholarship program for qualifying individuals.  Again, contact the admissions department for details.
