Shaping Pizza Dough Videos
This is the second step after you've made your homemade pizza dough (see making pizza dough video) and to me the step that takes the most practice and will determine how well your pizza turns out.
I've tried using a roller, stretching it by hand and even tried tossing it in the air like they do in pizzerias all with mixed success until I watched these videos and spoke with nationally acclaimed pizza making expert Ruth Gresser, owner and chef of Pizzeria Paradiso in Washington.
Chef Gresser, a graduate from Madeleine Kammans Classical and Modern French Cooking School shows you in these videos how to shape your home made pizza dough into balls for the second rising and then how to shape the dough into pizza by hand and then with a rolling pin.
In my opinion, the shaping process is the most important step to make thin crusted pizza that will cook evenly and crisp. Chef Ruth makes the process look easy and once you understand the process and practice a few times, everyone should be able to make great shaped pizza.
