Brown Sugar Glazed Fish

This recipe came to me from a dear friend who enjoyed dining out in New York restaurants with me. When I first met tilapia recipeSalima she was not that interested in cooking, but now tells me it has become a really delight for her. Here is how she describes the dish.

"GARY!!! I have a really easy recipe! We make this fish at home all the time and it's the best!"

And guess what, she's right! Don't be scared away by the ingredient list. These are items many home cooks can find in their pantry. It may not be as healthy as using fresh ingredients but hey, it tastes good and is easy to make.

When Salima made this dish for me years ago, I never even heard of Tilapia. Now you can find it in every supermarket. If you are not a fan of Tilapia, you can substitute more expensive sole or flounder but I would suggest sticking with the Tilapia.

Now I have to be honest here. When Salima gave me this recipe, she never gave me how much of each ingredient so I had to wing it. Here' s the amounts I used and the fish came out great. If you have a better combination, please let me know and I will give it a try.

INGREDIENTS

  • 1/2 pound Tilapia (fish fillets)
  • 2 tablespoons Italian reduced fat dressing
  • 1 teaspoon Teriyaki Light
  • 1 teaspoon Natural Season mix (Mortons makes a natural seasons mix but nothing in it seems that natural)
  • 1 teaspoon Lemon pepper mix
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh dill
  • brown sugar (about 1 tablespoon)

PREP WORK

Not to much prep here especially with all the processed ingredients. You will need to chop the "fresh" parsley and dill. Other than that, everything else can be measured out of the package.

HOW TO MAKE AT HOME

Marinate fish fillets with all ingredients (including brown sugar sprinkled on top).

Bake or grill (or cook in foil) in oven at 350 degrees 7 minutes each side.

Sprinkle with a bit more fresh chopped parsley and dill.

Serve immediately.

* Tilapia are native to Africa but are now farmed worldwide. They come in a variety of colors (pale red, white, gray, or gray-blue), are between 4 to 18 inches long and weigh 6 ounces to over 5 pounds. Tilapia can be substituted with any white thin fillet, such as sole or halibut- but Tilapia is a very clean white fish- VERY TASTY! ENJOY!!!!
