What’s On Hand Recipes

This category of meals is one of my favorite kind to prepare. I poke around in the freezer, fridge and pantry to see what needs to be used up and what kinds of leftovers I have.  Then, I pretend that I’m on one of those TV food competitions and see if I can come up with a way to use up all the odds and ends and feed them in my family in a form that will make them say “He meant to do that!”

While I used to have a really hard time with this, it has gotten easier as I have become a more confident home cook.  Now, I look forward to the challenge, and I find that it’s fun to come up with meals based on leftovers. It also reduces the amount of food that we compost or throw away.  Here you’ll find ideas for soups, stews, braises and easy egg dishes like omelets and frittatas.  Now go check out your fridge and be the star of your own food competition.
