About the Arizona Culinary Institute

Small classes and personalized instruction are two of the key factors in ACI’s mission. The school strives to offer training that gets professional results without sacrificing large amounts of time. The school offers a fast-paced education program designed to get students into their careers in as few as nine months.

It does this by using smaller class sizes and more hands-on training. It was co-founded by Robert E. Wilson, a graduate of the Culinary Institute of America with over 15 years of experience; J. Fife Symington III, the former governor of Arizona; and Jerry Moyes.

About the Diploma in Culinary Arts, Baking and Restaurant Management

The school offers a single Diploma in Culinary Arts, Baking, and Restaurant Management. The program is divided into eight three-week blocks of instruction, after which time students spend 12 weeks preparing meals in the mock-restaurant du Jour, which is open to the public.

The blocks of instruction include Basic Culinary Arts I and II; Saucier and Meat Fabrication; Basic Baking; Management, Wine, and Spirits; Nutrition; Advanced Baking, Pastry, and Showpieces; and Restaurant Operations.

These courses are designed to introduce more advanced skills and theories with each step forward, allowing students to feel comfortable about their skill development throughout the entire educational experience. An additional 12 weeks are spent in a paid internship at the end of the series. It is here that students gain valuable work experience that often leads to permanent employment.
