Diploma in Culinary Arts

The Culinary Arts program offered at Escoffier, Boulder is a 40-week comprehensive curriculum aimed at developing students’ culinary techniques and cooking skills. The program includes recipes from Escoffier’s teachings as well as more current recipes from around the world.

In keeping with their ecofriendly reputation, the Culinary Arts program at Escoffier also includes a 6-week Farm to Table Experience, during which students have the opportunity to learn about local farming practices and sustainability in the campus’ surrounding area.

The Pastry Arts program is 32 weeks long and covers a broad range of techniques and concepts. The program is hands-on and students have the opportunity to prepare a variety of pastry dishes and desserts each day. Typically, the class sizes are small and students will work with the same instructor throughout the duration of the program.
