St. Louis Style Barbecue Sauce
Not too thick; not to thin. Just right

- 2½ cups ketchup
- ¾ cup water or beer
- ½ cup cider vinegar
- ¼ cup brown sugar
- 4 tablespoons prepared yellow mustard
- ½ onion minced
- 1 tablespoon garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon mild chili powder
- salt and pepper to taste
Place all ingredients in a saucepan. Bring to a boil, then reduce heat and simmer for about 20 minutes.
Strain through a fine mesh strainer. Cool and chill in the refrigerator for a day or two before serving.
