Broccoli Pasta Soup

This recipe came to me from Fran Hall who visited my page and wanted to exchange web site links. She told me she self published her own cookbook called Recipes My Nonna Taught Me and was nice enough to send me a copy.

As Fran describes it, "Practical, delicious and easy to follow recipes handed down from my Italian grandmother (nonna)."

This is so easy and takes just a few minutes to make. It is meatless, fat free, and can be eaten at room temperature.

INGREDIENTS

  • 1 head of broccoli, cut into small pieces
  • 1 small chopped onion
  • pinch of salt
  • 1/8 teaspoon pepper
  • 1/4 pound angel hair pasta, broken into small pieces
  • 1 quart of water

Orzo or acini de pepe can be used instead of angel hair pasta. They can be found in the pasta section of the store.

 

PREP WORK

Couldn't be simpler. Cut the broccoli into small pieces, chop the onion and get your pasta water boiling.

HOW TO MAKE AT HOME

  1. Boil broccoli, onion, salt, and pepper in 1 quart of water.
  2. When broccoli is tender, add pasta.
  3. Cook about 2 minutes (angel hair cooks fast)
  4. Just before serving add 1 Tablespoon Olive Oil
  5. 1 Tablespoon grated Parmesan Cheese
