Winter Polish Sausage & Bean Stew

Nora is a great friend of my wife's and spent some time with us over the holidays with her husband and young son Liam. While here, she made this great meal in less than an hour. This meal is delicious. It calls for beans and a lot of garlic.... so be careful.

Winter Polish Peasant Sausage & Bean Stew
6 - 8 servings
INGREDIENTS
- 2 lb. Kielbasa sausage
- 1 tablespoon olive oil
- 2 - 8 oz. cans Great Northern beans*
- 1 heads garlic, chopped
- 1 whole bunch parsley, chopped
PREP WORK
Cut the Kielbasa up into small slices and finely chop the garlic. Finish the prep by chopping the parsley.
HOW TO MAKE AT HOME
Pan fry the Kielbasa slices in 1 tablespoon oil in a large pot until browned.
Add beans (with liquid), garlic, and parsley to the Kielbasa & simmer for at least 1/2 hour or longer till flavors meld.
Nora says, "I like serving this meal in bowls with crusty bread and a hearty red wine."
*Cannellini beans can be substituted
