This weekend we visited with our friends Armando and Monica. Monica is from Venezuela and a wonderful cook. On Sunday morning we were treated to a Spanish style breakfast that she whipped together with what she had on hand in her refrigerator.
Monica was going to make Spanish omelets but decided to make Scramble Eggs with Spanish Potatoes and Fried Cheese (queso frito). I'm not sure why she decided not to make the omelets but she said all you have to do is combine the potatoes with the eggs and cook in an omelet pan. She promised to send me her family Spanish omelet recipe to post.
Here are some photos of Monica preparing breakfast with some comments from me about the process. Everything was delicious and the potatoes were outstanding.
Monica sliced four or five potatoes along with 2 small onions and fried them in a little olive oil. She added some minced fresh rosemary but said you wouldn't add the rosemary if making a Spanish omelet.

Here's the Queso Blanco, Spanish for white cheese that originated in Spain and spread to Mexico. Monica said you can find it at Costco.

This looks like something I could serve to my finicky Mr. Darling that he would like. Queso Blanco is readily available here in southern California and looks easy to make. I will try this and see how it goes. Thanks RG!
