Preheat oven to 450° F.
Scrub the potatoes until the skins are clean and free from eyes.
Boil the potatoes whole in a pot of heavily salted water until you can easily insert a fork into the potato, but before it breaks apart.
Drain and cool for 10 minutes.
Place the whole, boiled potatoes on an ungreased baking sheet. Using a flat tool like a meat pounder or the bottom of a heavy saucepan, add steady pressure to each potato until it is flattened to about ¼ inch thick. It will look like a tray of round, brown, flat cakes.
Drizzle olive oil generously on the potatoes. Add salt and pepper to taste.
Roast in a 450°F oven for 35-40 minutes.
Remove from oven and serve immediately.
