Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes halved
  • ½ cup feta cheese crumpled
  • ¼ cup red onion finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh basil chopped
  • ½ teaspoon dried oregano

Instructions

  • Bring a pot of salted water to a boil and cook the orzo according to the package instructions. Drain and rinse the orzo under cold water.
  • Combine the cooked orzo, cherry tomatoes, feta cheese, and red onion in a large bowl.
  • Whisk together the olive oil, lemon juice, basil, and oregano in a small bowl—season with salt and pepper to taste.
  • Pour the dressing over the orzo mixture and toss to combine.
  • Serve the orzo salad chilled or at room temperature. Enjoy!
