My Daughter's Favorite Pancakes - Chunky Monkey Patties
I'm guessing there are many recipes out there called Chunky Monkey Pancakes but this recipe comes from my daughter's 8th grade teachers "eBoard" where she posts homework, projects, AND recipes.
I'm not sure where her teacher found this recipe for "Chunky Monkey Patties" but it is definitely one of my youngest daughter's favorites.
The recipe is used in the school's Family and Consumer Science class. I think this may be the modern name for what we called Home Economics when I was in school. I think it's great the schools are getting young boys and girls interested in cooking in middle school.
Chunky Monkey Pancakes Recipe
Ingredients
- ½ cup quick cooking oats
- 2 large eggs beaten with fork
- 1½ cups milk
- ½ teaspoon vanilla extract
- 1 banana mashed with fork
- 1¼ cups whole wheat flour
- 1½ teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- ½ teaspoon cinnamon
- ½ cup chocolate chips
- Pam cooking spray to spray on griddle/pan
Instructions
- In a small bowl combine the oats with beaten eggs, milk, vanilla, mashed banana and set aside
- In a medium sized bowl, combine the whole-wheat flour, baking powder, salt, sugar, and cinnamon, whisk to combine.
- Combine the wet, dry ingredients, and chocolate chips, stir with wooden spoon until just combined.
- Heat griddle to 350° F or pan to medium-high.(Griddle/pan is ready when drops of water evaporate on contact.)When heated, coat with cooking spray.
- Using ¼ cup dry measuring cup, ladle pancake mixture onto hot griddle/pan.
- Cook the pancake until edges begin to look “dry”. Flip and cook for about one minute on the other side.
- Remove from griddle/pan. Plate.
